Food Sustainability

Consumers are increasingly aware of the environmental impact of the food that they eat and the demand for organic, locally-produced and Fairtrade products is growing. Serving Up Sustainability is a series of three workshops for the professional catering and restaurant industries, presented by experts in the field, and will offer practical guidance to help you adopt more sustainable food practices in your business. Each workshop will cover different aspects of sustainable food and delegates are welcome to attend one, two or three workshops. The workshops will be run by London Food Link, part of ‘Sustain: the Alliance for Better Food and Farming’. They have been funded by the London Development Agency and will contribute to the objectives of the London Food Strategy. Delegates will also receive a free copy of the new ‘Sustainable Food Guidelines: 7 top tips for eating well and saving the planet!’ and a special reduced rate for membership of London Food Link.

Workshop 1 - Meeting the growing demand for food with values

Date:  Saturday 1 March 2008

The workshop will run from 10.00 – 13.00 and will include a tour of the kitchen and café and will offer a chance to sample some sustainable produce.

Venue:   ‘Feast Your Eyes’ at Laban, Creekside, London SE8 3DZ 

This event is hosted by Feast Your Eyes at Laban. Offering fresh, local, seasonal and, where possible organic ingredients, Feast Your Eyes is passionate about food and committed to Fair Trade, sustainable business management and above all quality and value for money.

                

Workshop 2 - Sourcing the sustainable supply chain: where to find, and how to specify supplies of sustainable food

Date:  Tuesday 4 March 2008

The workshop will run from 8.00 – 11.30 and will include breakfast and a tour of the market

Venue:  New Covent Garden Market, London SW8 5NX

This workshop will introduce attendees to recognised accreditation schemes for sustainable fresh produce in the UK, and offer examples of wholesalers and producers that supply sustainable food.  A free sustainable breakfast will be followed by a tour of the market and a chance to meet the wholesalers at New Covent Garden Market.  

                   

Workshop 3. Stand out from the crowd – redefining your business through sustainability 

Date:  Thursday 20 March

An afternoon workshop from 16.00 – 18.30 followed by tasting buffet and drinks

Venue  Number 4, Charterhouse Square, EC1

The workshop will demonstrate how adopting sustainable measures will prepare your business for the growing market of 'food with values' in sectors such as restaurants, market trading and event trading. You will explore the key issues in sustainable food and business management and hear an interview with a caterer about his experiences. The workshop will also address sustainable catering within the specific context of London, exploring ideas such as collaborative tendering, collective buying groups and the need to centralise facilities into hubs.

Please note that booking is essential and that there is a limit of two staff per premises for each workshop.
Attendance is free but places are strictly limited. Please book early.
